Huevos Motuleños
The town of Motul, to the northeast of Merida, in the Yucatan peninsula, is a lively place. Its lovely central square is overlooked by restaurants, which serve up the town’s signature dish: Huevos Motuleños, or Eggs Motul.
It’s a delightful breakfast dish, not too heavy on the stomach, with a huge amount of flavour and easy to prepare.
INGREDIENTS
Two or three fried eggs, fried sunny-side up.
Black refried bean paste
Toasted corn tortillas (one for each egg)
Plantain
FOR THE SAUCE
Tomatoes
Garden peas
Ham (diced and with the fat removed)
Onion
Garlic
1 Habanero Chili (whole)
Salt to taste
METHOD
Prepare a tomato based sauce by softening the ingredients together in a saucepan. Cook for 40 minutes. Meanwhile, prepare inch-long chunks of plantain for frying, cook for 10 minutes, or until golden brown.
Place a toasted corn tortillas on each plate and spread with the black bean paste. Place a fried egg on top of each tortilla, before bathing the entire plate in the sauce. Garnish with the fried plantain.
